WINTER MOON ROOTS
After a few frosts, Rosendo’s roots taste exceptional. He does everything he can to maximize the flavor of his roots and waits until the last possible moment to harvest. He monitors soil moisture vehemently until the seeds germinate, and once they have begun growing, they are left untouched—with no inputs whatsoever—until they have had a few frosts to max out the sugars.

BABY ARTICHOKES
We are lucky to work with John, Mike, and Teresa who grow incredible Baby Artichokes, a product that is hard to find here in the US. They harvest Baby Artichokes from the lower stalks of the plant, where the shade provided by the mature heads slows and stunts their growth. The result is a small, incredibly tender artichoke that is wholly edible from its outer leaves to the almost fiberless, underdeveloped choke.
