Set in a historic quarter of Mayfair, Kitty Fisher’s features a produce-led, British menu. The kitchen is helmed by Tomos, a rising star on the London culinary scene (he was awarded Young British Foodie Chef in 2014 and, a year later, led Kitty Fisher’s to great acclaim, with critics naming it the ‘hottest restaurant of 2015’*).
Tomos’ inspiration for all of his dishes comes from the seasons. He looks to the market to see which fruit & vegetables are available, and bases his menu on produce at its best.
His favourite ingredient is Wild Garlic: its smell and flavour immediately remind him of the changing of the seasons from spring to summer.
Much of Tomos’ cooking is done on the grill, and kept simple, so the flavour of the fruit & vegetables he uses must be outstanding. He applies smoke and fire to anything from ripe Italian peaches to Spanish calçot onions, knowing he needs little more than their natural sugars as seasoning for the final dish.
He hopes to use some of his profile to raise awareness of his native Welsh produce, which doesn’t often make it to London markets.
